Orange-Hoisin Glazed Cornish Hen, Stuffed with Sausage Apple Brown Rice

Ingredients
  1. 2 Cornish Hens
  2. 2 Tablespoons olive oil
  3. 2 Tablespoons butter, melted (for basting)
Stuffing
  1. 2 Tablespoons olive oil
  2. 1 Aidells Chicken Apple Sausage, cut into 1/4″ cubes (from Costco)
  3. 1/4 cup green onions, chopped
  4. 1/2 apple, chopped into 1/4″ chunks
  5. 1 Tablespoon fresh garlic, chopped
  6. 2 Tablespoons orange juice
  7. 2 Tablespoons soy sauce
  8. 1 Tablespoon brown sugar
  9. 1/2 teaspoon Five Spice Powder (an Asian ingredient)
  10. 1 cup cooked brown rice
Orange-Hoisin Glaze
  1. 2 cups orange juice
  2. 1/4 cup brown sugar
  3. 1/4 cup soy sauce
  4. 1 Tablespoon Hoisin sauce (Asian ingredient)
  5. 1 Tablespoon garlic, chopped
  6. 1/4 teaspoon cayenne
  7. 1/4 teaspoon Five Spice Powder
Instructions
  1. Remove giblets from Cornish Hens. Rinse, dry the cornish hens and sprinkle the insides with salt and pepper.
Stuffing
  1. Saute green onion and apples in olive oil for 2 to 3 minutes. Add sausage and garlic and cook another minute.
  2. Add orange juice, soy sauce, brown sugar, spice and brown rice and mix together. Fill cavity of cornish hens with stuffing mixture. Baste cornish hens with olive oil and sprinkle with salt and pepper.
  3. Bake in a pre-heated 350° oven for about 1 1/2 hours or until the internal temperature reaches 180°, basting with melted butter every 30 minutes.
  4. In a medium sauce pan, combine the orange juice and brown sugar. Cook on medium-high heat, stirring occasionally, until mixture is reduced to 2/3 cup, about 15 minutes. Add soy sauce, Hoisin sauce, garlic, cayenne, and Five Spice Powder and simmer over medium heat, stirring frequently, until reduced to approximately 1/2 cup (about 5 to 7 minutes).
  5. Cut Cornish hens in half, removing spine in the back and cutting between the breasts in front. Pull some of the stuffing out and set the Cornish Hens on top of the stuffing. Top with Orange-Hoisin Glaze.
